About Us

At Caliche, we take pride in roasting every batch of coffee right here in Fredericksburg, Texas—making us one of the few coffee shops in the Hill Country to roast in-house. From farm to flame to cup, we believe great coffee should be personal, intentional, and rooted in community.

Our team sources high-quality green beans from trusted farms around the world. Each lot is roasted in small batches on our Diedrich IR-7 and IR-12 roasters, chosen for their clean, consistent results and lower environmental impact. Roasting in-house allows us to stay close to the process—honoring the craft, controlling freshness, and bringing out the unique character of every bean.

We believe the art and science of roasting is lost in mass production. So we keep it small, we keep it fresh, and we keep it connected—to our producers, our customers, and our Hill Country home.

With two Fredericksburg locations—our flagship café at 338 West Main and our newest bar inside Methodist Hill Country Hospital—Caliche is a daily ritual for locals and a favorite stop for visitors.
